Cracked wheat also known as Bulgur (wikipedia) is highly nutritious. In India they are called as Daliya. There are many ways to cook them, some prefer to cook them as upma (I love them) however some eat it with milk, which tastes sweet. Upma can be either plain,simple or you can add spices and vegetables to it. I made this simple and quick Daliya upma. Note the time taken- 10 minutes and that’s all. If you are hungry and in hurry, use pressure cooker and tada! you will be done in minutes.
- cracked wheat or Daliya – 1 cup
- salt to taste
- A tsp of oil
- Vegetables (optional)- chopped beans, carrots, tomatoes etc
- cumin seeds- 1tsp
- 1 chopped onion
- 2 chopped chili
- 1/2 tsp of pepper powder
- Cashew nuts
- Take pressure cooker or electric kettle, heat oil and add cumin seeds, when they turn brownish black,fry onion and chili. Add cashew nuts, pepper powder and salt. Now pour water and add daliya to it.
- Close the lid of the cooker and on medium heat cook for five minutes.
- Serve it hot.
