we all make potato wedges. I love them, no doubt.But eggplants compared to potatoes are a healthier choice since they are low in calories and provide dietary fiber, vitamins and minerals.This recipe is simple easy and quick. Makes a good snack, I served it with curd. I also prepared a dip made of curd and tomatoes. Details are below. HERE IS THE RECIPE-
For Wedges :
- 1 aubergine or eggplant, cut into wedges.
- corn flour- 1/2 cup
- Pepper powder(optional)
For Dip :
- Pepper powder
- Green chili chopped
For wedges :
- Take the washed Aubergine or eggplant and cut it into four pieces. Cut each piece into wedges. Keep it thick. sprinkle little bit of salt on the wedges and keep them aside.
- Heat oil in pan and cover each wedge well with cornflour. Fry them till golden brown.
- serve them hot with curd like above or make dip. If you wish, You can sprinkle a pinch of pepper on the curd and add chopped chili.
Make paste of chili and tomato. Add a teaspoon of paste to the curd. Add salt and pepper powder. Mix them well. we are done.
